Any tips or good resources on building email list?

I have few informational blogs that are not focused just on one niche. Any tips for builsing good email list? I have built two offers for sign up in exchange of free ebook for two most read categories, so the offer is kind of relevant. But after several months I have only few sing ups. Should I offer two or three ebooks? Or offer something completely else?
I have like 40k visitors each month on one of the websites.

This means, you did not create an ebook on a subject which is necessary in your niche. You have to create a necessity or find a necessary topic and create an ebook on that topic. I remember, I was getting at least 4 emails per day with around 60K visits per month.

If my niche waa let say fitness, I have crated general ebook about 20 hacls to burn fat. But in that category I alao have articles about food and etc..

As suggested by others offer freebies, and segment your list by category to send them only content that is related to their interest.

page will get a high sign up rate, but will not rank in the serps- solution?

Build huge list with free method on IG or Facebook - but how do it? Solution? Method?

Using Medium platform writing daily content to publications? A good method how to do it?
