I would like to open a portfolio site where to show all my developed projects (websites) but I have a question:

1) Should I write my name and surname in the domain?

Are you planning on being a solopreneur always? (If so, go ahead with a surname) or do you plan to grow and or hire in the future? Also if you ever plan to sell your business, website, IP, you shouldn't use your name but instead
a made up name or 2 short English words dot com that covers your niche, etc.

Theoretically for now I will be alone but surely if things go well at a certain point I will have to hire someone hoping to turn my business into a digital agency.

If you outgrow your business and you want to sell it for a multiple of earnings, it is VERY difficult to sell if it has your personal name on it as it is branded to you as an individual.
Better choose a brand-able name FOR EXAMPLE: Moonpig, Pinkfluffdesign, Hellobinder
That way you sell the entity and not your name.

In case of digital agency you wanna choose a separate domain and build a separate website from a personal domain and website.
