If I have an authority site with multiple different categories, should posts from different categories interlink with each other?
Or is that bad for topical authority?

Yes, if it makes sense to link to another page on your site, for example: if you've written an article that includes a mention of washing machines and you have a page in a different category about washing machines, then by all means link to it - it helps both the user and the spiders navigate to relevant content.

If they are relevant then yes do so.

If you link from CBD article to a dog article, that's fine because dogs can take CBD for pain relief.

If you are wanting to link from a CBD article to an article about baby strollers, ask yourself, where is the relevancy here.

Thank you for clearing things up, very helpful.

Yes, you can interlink the relevant articles. But don't over do with it.
