I'm running a few websites on a Cloudways server, and I'm using a Cloudflare account for each of them to mask the IP so they can't be connected together. Now, I need to create emails for them to create social accounts and stuff like that. Preferably send and receive emails. Previously, I always used Google Workspace (G-Suite) for this, but I'm looking for something cheaper and more straightforward. I'm not too experienced with SMTP, but when I would set up SMTP on my own server, I assume the website would share the same details? Or are the MX records masked through Cloudflare as well? I came across Zoho which looks pretty good. Any other ideas?

Thanks! In the meantime I've found something similar which works with forwarding as well. But, can't the websites be connected by the MX records forwarding to one single email?

I don't get your question. You can forward all the websites to a single email if that's what you were asking. If not, then please be more clear.

What I mean is, I use Cloudflare to mask the IP of my websites. Basically, like some people do when running a PBN. Otherwise, all my websites would share the same IP address. I wanna treat them as separate entities to not leave a footprint for Google. Wouldn't it be possible to connect them when all the MX records are forwarding to the same email address?

Not really, as the MX records will point to an address that is used by many other people. But if you are worried, use some domains with Zoho and some with Improvmx.
 
For your Kind information you can mask the IP of website but not SMTP.
So when you send emails your SMTP uses primary IP of server you cannot proxy that unless you have external SMTP.
