Dating/mating is just like everything else on this forum, you're gonna have to try a lot of stuff before you find the one that is... well, appropriate/manageable, nobody is perfect.
IMO the best thing you can do is to move on, enjoy life, have fun, wasn't meant to be, whatever.
I mean what's the point of relationships if they don't make your life better? Cause you anxiety, etc? Find different people, different GF, whatever...

Pushing for commitment or exclusivity? Pushing for commitment because she's gonna ran out of time or wants something from you (money, whatever, ...) IS red flag.
It doesn't really matter what ticked her off, maybe you would have to hit the gym more often, maybe you would need more money or it might be nothing you can do because she was just messed up in the head and needed attention (from multiple guys).
Going "monk-mode" is probably not a good idea. You wanna move on, forget about her and most importantly not let her affect your life (which includes avoiding monk-mode stuff etc). Improve your life by all means, but try not to shut people out, accept them for what they are and what they can never be to you. Don't hate them for it, they can't help themselves, accept it and move on. If you do this long enough you will eventually find yourself around better people and in better state of mind.
