to OP, I don't believe it matters... google won't read all the notes, imagine how many people they'd need to employ?

google can read image with ocr, and you get relevant ads base on ur interest inside free gmail base on that. text & spreadsheet is easy peasy.
I have a google business account, and there is special notification if anyone in ur organisation is sharing privacy data like passport, id, etc.
surely I wont trust them
