So the most optimized thing for a new channel is to play on popular games an start with low competition keywords ?

It does not matter much. What is needs to make it big on YouTube is good content.

Target low or very low competition keywords in your title. Make ur friends and family search them and click them. As you're getting subscribers, it will be easier to rank for medium keywords and after you are "famous" you will rank for high competitive keywords.

Even though i tried with Low competitive keywords, but it's not ranked even more than a year..

if you want to rank for high comp keywords that are saturated, (many videos being posted every day)
then youll need a combination of things.
high views per hour
good ctr
good retention/watchtime
and engagement.
