I'am planning on investing a couple thousand $ into Tether (USDT), the 2 good options i see are youhodler or celsius.

Youhodler has a 12% interest rate on stable coins and celsius has around 9%.

What are your thoughts or suggestions, need some expert advice.

I have no experience with Youholder, but Celsius is nice. The company is legit and their customer support is great.
The only thing I don't like is: if you login from PC, it disconnects you from the mobile app and you need to enter your 2FA code again.
Another great option is Ledn. They are fully transparent and one of the safest companies out there. Customer support is really top notch.
However, they support USDC and not USDT. If you don't mind, I'd recommend Ledn.

Is the interest paid monthly ? do they have any short of account restriction type of things on bigger deposits, let's say $300k ?

USDC is also not a problem as long as they do not have so many documentation formalities etc.

No issues at all. KYC is obviously required but it takes a couple of minutes. You take a picture of your ID, scan your face with your phone camera, and you're done. Instant approval.
