I've always been a .com person.
If the domain isn't .com I'm generally very weary and would stay away unless I had no other option.
Now I'm looking at a domain name for my token and the .com isn't available.

If for example my token was called dog would it be better to go for something like dogtoken.com or dogchain.com, or to use a different domain extension such as dog.finance or dog.io?

I'm a .com person as well so I prefer dogtoken.com over dog.finance.

I always felt like other extensions are harder to rank... don't know why. It feels like .com just better overall.

it seems "dog.io" sounds pretty catchy .
In your situation I would take dog.io and got "dogio.com" as well ;)

.com is too familiar and easy to remember than other extensions
for secondary domain extension use crypto / io sounds good for your project

So you think dog.io is better than dogtoken.com? Thanks

.com is the king. From my personal research, companies that use other extensions like .net, .org, .biz eventually switch to .com in the long run. With the exception of cctlds .com.au, .Ca, .co.uk etc

.com all the way

.com is always better than any other. Dogchain.com sounds good, you should go for it.
