I have a single product(just branching out into small niche) ecommerce store. Shopify, electronics oriented, white label branded(except for the new products due to cost).
Do you look at products/niches and landing pages, as well? Or just google ads campaign data?
I'd prefer to chat in private rather than in an open forum, though.

for running google ads to a Shopify product page, what are some things you tend start with? A - Z.
keyword research, on page optimization, etc .?
and in terms of running ads, do you start with maximum clicks at a low cpc and then switch over to max conversions or how do you handle it?

Since you have a shopify product page, your goal must be sales. And for this you need to run a shopping campaign. This will automatically trigger your ad title, description to the keywords so you don't have to set any keywords for this.
Just have correct keywords in your landing page of your product pages. Relevancy between title, description will have a good impact which in turn gives you right customers who buy on your shopify site.
