Thanks for the link but I can't seem to find the exact reference to my question there. I see that I can send an order confirmation to a specific email address for example to the admin but I don't see where it shows how to make the form send an order confirmation to the client.

You can add multiple email notifications. Create one for the user who submitted the form and click on the Recipients tab and make sure the recipient is the submitted email address.

No. You should be able to use the email field on the form in the following manner, {email_address} just as you would in the body of the email.
