It was updating twice daily up until now. I'm worried with this big jump in SERP ranking for a specific page, there's some sort of hold/wait to make sure the site and what I'm doing is legit.
It is, but mistakes could be seen by Google as something I would do on purpose to try and cheat. This is why I'm worried.

that's not something you can judge with for sure,
give it some time, google is rolling out an update now and that can be a possible reason

Oh OK.

If it's an update then I am not worried after all. Maybe it'll even refresh my core web vitals page to start fixing that haha.

Uh oh!

Nothing out of the ordinary, this happens sometimes - there's a gap delay and it'll eventually get updated and stay on schedule.
