I am guessing you suggest watermarking incase someone reuploads your content. Is there any data on when is the best time to upload new content (I haven’t found any info on this).

You can get plugins from VidIQ and TubeBuddy that you can use with Google, even the free ones are helpful.

Youtube actually shows you the times most of your viewers are online. Its in the analytics section under Audience tab
