• resmush (free) or smush pro (paid) for image optimisations, use them along with some webp converter if you have too many png (you can find a couple free plugins)
• ad manager is good enough for ads (free)
• wp rocket or flyingpress for caching (both paid)
• both rank math and toast are good, I don't see any major technical differences myself, use who's better for you

If you want to start with WordPres, I do suggest to start with the Astra Pro theme, with Resmush, Ad-inserter Pro and WP Rocket.
Do not use Rank Math or Yoast - I suggest you to go with the SEO Framework, which is free of bloatware.
