What about after sell the product is offline, how stripe can know? I agree there will be a problem if there is some complaints

If you work with a chinese PSP, be ready to have issues at some point. It is super expensive (setup fee usually between 1K to 5K, rolling reserve 10% 180 days or more, they pay you every 2 weeks or 1 time per month, they will charge you 6-7-8% even more, they will take a 2% FX fee when they pay you from Yuan to EUR/USD/GBP, they will block you one day, monthly fix fee, yearly fix fee, etc.). If you have any issue, dont expectto sue them or claim the money back.

If you sell offline (do you mean brick and mortar business?), they will not see it if you have 0 complaints.
However, keep in mind, if you process a decent volume with a website with 0 traffic, some PSPs have tools to see it. Having 200K turnover on your small webshop with 0 audience, it is unsual.

Yes, not the best PSP and not safe at 100% but good enough to grow and scale a bit your business. As I said, if you reach 80-90k€/month, then you have access to Tier 1 PSPs.
Remember, SMM is not a low risk business

I wrote it in many threads about SMM. Payop is a good start for SMM with low volumes
For big volumes, it requires direct contact with tier 1 PSP (so you can understand I will not share on a forum direct contacts/names)

You are lucky if they accept such things. And for that reason they are expensive.
The best suggestion would be use of BTC and keep the service quality TOP. You will hit by scammers but you can bear the burden.

TOO many charge backs are the worse things in your domain.
