Instagram automatically changing back the email to the og

Why does this happen and how can I fix it? I get an email that the email has been changed to the new one and I need to confirm it and a few seconds later it goes back to the old one again and I get another email saying it was changed from the new one to the old one.

Did you actually confirm it ?

What I would do is to try to confirm the email you want. Then see if it's still switch back to the OG. Instagram is known for that ; it often changes the e-mail to the very first one, whenever you get an EV in certain condition (ex : suspicous login attempt), if you didn't verify the new one.
