In theory yes, but not as simple as you think. When we buy/sell a coin we interact with each other. I set the price for you and the other way around. The only way an exchange can manipulate is by delisting a token or pause trades.

If we force the idea, we can also assume that the exchange does know what coins are not used for a long time and use those to quick trade. But this is quite risky for them. Banks are able to do this because they can print more money. Exchanges can't print crypto.

Of-course they can and they always do. BIG whales also do the same, especially with low cap coins (or many would say shitcoins). So, always stick with big daddy Bitcoin!
