I've been using WordPress and elementor, and I feel like a ui graphic designer without coding. But it's true, load times suck and it feels clunky. Any advice on this?

Absolutely You no need to know any coding to design a website now. Most of the CMS (Content Management Systems) have a lot of free well-designed templates and some paid also, where you can simply put your inputs as per the guidelines given in the CMS. As has been said, WordPress will become your new friend! Most hosting accounts allow you to install WordPress without uploading or creating MYSQL databases too.

If you progress in building sites, you will probably learn a little code anyway.

Yes, but usually you have to pay a monthly fee (through Squarespace or whatever) or buy some software. Sometimes you can find a free method.
