I build links to the homepage and category pages on my ecom. Links to the homepage are a must, whereas linking to which inner pages depends on your target keywords of those pages. My target keywords are on category pages so I build links to them.

If you have a product page with valuable keywords and you want it to rank, feel free to give it some backlinks. So be flexible with that.

1) linkable assets work af for ecom. Recently did a campaign for my own ecom, we scored around 300 links, and rankings are increasing ever since (it was a give away when people would do something)

It's depend on what you want? If you wan to focus on your brand then you'll do homepage backlink if you focus on you product then best option is create backlinks on your category page.
