I have clients in all possible niche. I have seen much more success rate with these niches while comparing to other niches.
Particularly in this COVID situation lot of DIY sites are getting more traffic.
As @SEOspur suggested if you have money, technique, patience you can choose any niche of your choice

In my humble opinion all niches require hard work in one way or another. Good solution could be finding low competition keywords for a particular niche or a product/something specific in that niche and building narrow blog about it. Targeted sites always perform better than broad.
