Bitcoin is not anonymous at all. Every single company will require your identity
Don't need to create wallets via 3rd parties. Many companies don't require ID anyway (search for "KYC-free crypto trading platforms", or this site

I don’t understand why would you want to stay anonymous
- you don't want to pay unnecessary taxes. Same reason many businesses prefer their customers to pay with cash than card
- you live in an authoritarian country which heavily monitors domestic financial activity and restricts certain kinds of payments
- you live in an authoritarian country and are a part of an organisation which opposes the ruling state, and wish to seek funding from abroad easily
- you live in a country going through financial collapse, such as Cyprus in 2013, and want to hide your wealth. The reason for this? During the banking crisis the Cypriot government seized any funds in personal and business bank accounts that were higher than $100,000 to bail out the country's largest bank. If you had $200,000, you lost $100,000 instantly. People used Bitcoin to protect and hide their wealth, rightly so.
- you would like to make private purchases of products and services which might be considered taboo (ie porn, sex toys, sexual services, grey area chemicals, surveillance equipment etc).
- you might want to purchase things without the people you live with knowing, like parents or partners.
- you might just prefer to remain financially as anonymous as you can incase one day the huge troves of data that are being collected right now can be used against you in order to create a profile of your spending habits for example or to track you movements historically by your payment records.
- you might be libertarian and believe in the freedom to do what you want as long as it doesn't harm others, and therefore might not have any other reason apart from enjoying your own personal freedom
I have personally benefited from 4 of these reasons myself, almost anyone I know that has used Bitcoin would fit into a number of these as well.
