Does anyone knows how exactly google determines duplicate content?

I have the following situation: I have 2 websites which are in the same niche and I have 1 article to target a specific keyword. I would like to find out which of the both websites get better results for the article.

My Idea:

1. Post the article on website 1 and wait one week to see the results
2. Delete the article URL from website 1 and wait until it is not indexed by google anymore
3. Post the article on website 2 and check the results.

Will this work out or will google remember that the same article was already posted before on website 1 and will detect it as duplicate content if i post it on website 2?
 
The time you're going to spend removing the article and waiting for deindexing could be better spent writing another article to have published on the second site concurrently.

This way, you can assess the results simultaneously and see which ranks better without wasting time.
 
Better to go with 2 articles than waiting for indexing and deindexing.
 
or, re-write the article to make it unique with the same keyword density and post it on both. o_O

Sure thats the best option but I would be interested to understand how google determines duplicate content.

For example, I have one website with good content but the site structure and some other things are not good for seo. So I was thinking of removing those content and put it on a better website. Will google then detect the texts as duplicate content because they already existed on another domain before?

If your plan is to combine both sites then do it page by page. You take a page from the old site and republish it on the new site. On the old site, you add a 301 redirect to the new page on the new domain.
 
I think that would be no problem. Lots of people use expired contents for their sites anyway.
 
Don't waste your time. Get them rewritten or try to do it on your own.
 
Duplicate content usually refers to substantive content blocks within or across domains. These content blocks either completely match other content or are obviously similar.

Rewrite the article and make it unique
 
I think goole save all those data in history.
it's safer for you to rewrite the content
