It means convert visitor to your goal for example earn money from affiliate offer! So for every 100 visitors 2 completes your offer. You have 2% conversion rate...

As @Fenix19 said, you want to convert your visitors to buyers. Obviously you could make some money with adsense, but you should definitely have something to sell within your articles.
You could set-up a funnel where you track each step in order to improve your conversion rate (e.g. Social Media Post/Ad -> Article -> Free E-Book -> Follow Up E-Mail -> Conversion), and therefore your revenue/profit.
