I mean legit whitehat niches. Something like food, gaming and fitness are very well saturated but what about some niches that you would get an audience really quickly just because there isnt much content on that niche.

Try to find big niches and break it down to a smaller niche. One good method is to search around for hashtag scrapers, put a big hashtag and search for related hashtags and then look after hashtags with low search volume and bang you might find a good microniche.
