YouTube Niches?

What are the best youtube niches out there right now generally? I'm not specifically doing any type of business model like CPA, dropshipping, etc. I'm just trying to build a channel (without using a face on it like a theme page) and I'm looking to purse something on YouTube for long term but don't know which niche. Any niches out there that aren't saturated? Or any new upcoming games, etc. If anyone knows, it would be greatly appreciated and I'll probably even end up making a journey thread. Thanks.

For me if you want to build your youtube channel, you can create videos from the things you are really good or you know about that niche.
This is just simple example:
there is a local youtuber in my country. what he did is just reviewing only street food or small restaurant. keep that in mind that this is not famous or that fancy restaurant. I've got to say that his method is unique because most of the people will review famous restaurant, but he wasn't doing that.
Less than 2 years he already got 2M subscribers.

i think its a positive, if you are odd looking, and you do regular stuff, you attract views, cause you can become a meme

Let's suppose he'll review the new iPhone 11, he can just show the phone with his hands and explain the fixtures with his voice but distorted. No showed face.
