Just purchased one myself.

They come in bigger sizes. But this one is the cheapest.

How do you organize them?

I use mine 1 sim card - 1 account, anyone out there had a fancy idea they want to share? 1000 envelopes?

Got 400ish, separated in batches of 50.
Paper tape over sim slot on the card. It will hold the SIM i place and you can write on it.

Rubber band them and thats it.

I saw a YT video of a dude using a Rolodex, one of those old business card holders. If I was working with sims, I'd probably do something similar.

As far as i know a 128 simbank can go up to $700, so i insert the sim into a phone, get the code to verify the account and then put in back in an envelope or something.
