No matter what niche you chose the ads that users will see depend not only niche of your site.
The site could be about animals but each user will see ad depending on his browsing, interest, social media etc. so one can see ads about BMW another about SEO services, and another about something completely different.

I don't rely on AdSense since 2017. Buy a lot of WhatsApp/Telegram/Twitter/Instagram groups and voila. Pharma, Porn and Gambling will fill your pockets.

Well even though fitness and health niches are quite competitive still if you present it in a different way it will surely work great. Like holistic approach which includes natural remedies and which encourages the usage of only natural and organic products. The other bankable niche is make money online as inspite of being an age old one it still never goes out of trend as people search for new alternatives to make money each day.

Where ever there is high competition, there is big dollars. The reason for this is because there is so many people advertising that advertising naturally rises. I don't have any specific niches, but just keep that in mind. Where there is high competition, there is big dollars.
