Are you planning on selling on by weight? Think you mentioned earlier? As if your buying off a back of the van you need to trust the weight your getting is what the person is telling you vs in the market everything will be scaled for you.
Yes, trust is an issue the advantage we had is when delivering out in the van the first few orders where product and cash exchanged on the spot. After a few most will set up a standing order now, some prefer to just pay cash which is good for the mattress
If you are delivering in a city you want to break that down to sections then once you get an order, that customer is assigned to a section and you state all deliveries will be made to the west side on Monday, north on Tuesday or however you want to work it. You need to leave 1 or 2 days free to pack or you will be quickly running around like a headless chicken.
Doing it that way would keep your fuel costs down as you could plan routes for that day.
That's the only way I can think you might do it with keeping overheads low. If you are going to be posting the stuff out using a courier I would start looking at how some other companies do it and pinch ideas on branding and packaging - id even go as far as saying buy a cheap screen press and have a go at printing your own boxes!
Some other idea if you have people or restaurants that require a specific crop IF you can source that you can clean up. So in our area Indian takeaways and restaurants like to get fresh mustard leafs which is very hard to come by, most will travel 180 miles once a week to go and get them I now grow and provide these locally - If I done it sooner or had that idea I could have paid the mortgage off LOL - as that sort of crop gets around the internal community and your set for life!
Again can't comment on packing laws / health and hygiene and all that. But I would look at buying some brown paper bags from China use Ali Express first to get a few samples it's cheaper and quicker AND you get a more honest product. Once your happy ask to do a deal with them on bulk supply OR find them listed in Alibaba the reason I say to do it this way as we ordered 500,000 paper bags that were only good for blowing our nose with!!
You want to make sure you get two sizes one to hold up to 750g and another for 2kg (again depending on your product its larger than ours so you may need a better range)

You can't beat a plastic tub for holding mixed salads we double these up and use them for soft fruit as well although recently soft fruit we switched over to a cardboard type box / basket. People do complain about the plastic but it does stop the leaves from wilting, again could use a plastic bag and a bag tie to hold it all together.
I think that's about it, when you get your crops when picking make sure you use some vented / boxes or mesh type plastic carry boxes anything that's sold will make the crop sweat and start go soft, carrots, spuds and most root crops are prone to this and salad crops will wilt quicker.
If your doing a range I think either have a premium mark up for picking and mixing or offer 4-6 choices that are at a preset price. Just thinking if your on your own you will want to cut down on admin and picking time, but you will soon learn this after 10 orders
