What is a good number of monthly searched? and what SEO difficulty is good out of 100?

Depends which keyword tool you use for difficulty scores.

Monthly searches ideally into the thousands but never overlook low hanging fruit, so don't be afraid to go with searches of 400 if the keyword score is 15 using Keysearch / KW Finder etc.
 
Ranking #1 for a keyword that’s high ticket that only gets 10 searches a month could make you 10x more money than ranking #1 for a low ticket item keyword that gets thousands of searches.

Analyze it yourself. Don’t just use kwfinder at face value, these tools often don’t take into account pbn links from what I hear. Search the term in google and check on page, check backlinks profile, signals etc.

You need to be able to analyze these yourself, people charge for those kinds of keyword services.

KWFinder is often on the low side, but in all honesty, I'd not consider that one based on those numbers. As @AustinNash says, you need to check manually yourself the competing pages, use these tools as just an indicator and not gospel.

If you're using tools, use Ahrefs and one of the others just to compare too.
