Well, what type of content is not saturated?

I find this niche very attractive firstly because potential viewers have very low standards then it comes to video quality and are willing to watch a lot of videos from playlists and suggested column.

Kids content WON'T get saturated, just pick a nice (really nice) thumbnail; send some initial views/likes/comments and you can hit GOLDMINE.

The most important thing for kids videos is having content they will actually watch the whole way through or at least most of it.
The next is getting into the suggested videos on some bigger channel. Tip once they upload something upload your own video with in a few hours with nearly identical tags and title.
Last is having easy to recognize thumbnails that they will click on.

I have found that keywords mean nearly nothing for search and discovery but works well for suggested videos.
Engagement is way more important.

I admire anyone who creates kids videos as its so hard as an adult to get into the mind of a kid and to know what will keep them engaged for long enough to gain good engagement.

I've watched my niece flick through videos on YT quicker than I flick through pages of a book.

Kids don't use the search bar. They click on suggested videos and they don't read the titles, they click on an appealing thumbnail. So I guess that's what you should focus on.
