One domain - Many domains ...or Subdomains?

How would you build a white hat authority site?

I am starting a new white hat project.
The site has 5 products (each product with many sub-products).

What would you suggest is better for SEO?

I am thinking 2 solutions:

1. One main domain (authority site)
+ Subdomains of the main domain - 1 for each product (each subdomain different wordpress site).

2. One main domain that for each product points at another domain.
Practicaly 1 + 5 domains.
Obviously with no follow links to avoid ban for site scheme.
 
Subdomains seem to perform terribly lately I wouldn't use them.

Also, why not have a homepage talking about all and then products on individual pages? (same domain)

I would say option 2. And just make sure with no follow links to avoid being penalized by google.

Secondly i decided to go with one domain, without subdomains, but different layout-menu for each product ;)

it sound like the products are not connected to eachother? then i would recommend multiple domains as it might confuse the customer to see non-related products

You're welcome. Good choice in my opinion.
 
Some products are similar, some are not.

All products have to do with cleaning and protecting in general. So they aren't far away...one from the other.
 
I'd go with primary site>many products>each products are categorized properly under primary product.
If you have multiple products, then setting up a good silo structure can go a very long way, as that also helps with the distribution of the link juice to the sub products in the process.
If you have 6 different sites -you'll need to setup 6 different sites altogether. Spend more money in replicating the same link for 6 sites, and if these products are very similar, they will not rank well in the process, and keyword cannibalization will happen.
