You must have to make a backup of your website. Ask you hosting provider, they have 7 days backup of all your public_html files.
 
I wanted to do this on a client of mine (who kept promising to pay, but never did). When I mustered the courage to mutilate the websites, to my surprise, the websites were no more.
He deleted them before I got the chance to ruin them :)

Well, you can easy to setup google time deindexed, its more spectacular.
 
This is a terrible way to do business. The service provider is definitely not going to be getting paid after this, and even if they were, that business relationship is ruined. It's a waste of time, and an awful track record for potential future customers.

Get your demands in writing in the contract phase. If your client does not follow contract procedures, don't do the work for them any more, period. While "funny", this is stupid as shit and gives web based freelancing and project management a bad name. If you have access to the sites, take them down. Don't publicly call out your client.
