Not clear your though, thinking you want do your business but not want any relation with google.
Google is a like bookshelf where all site information are located. Google can help you to promote your business. most of the people need anythings first search in google. if you're in first page then they will find you too first. yes some time google misbehave of some site. that time you will suffer problem. But if you can run with google your success will come hurry.

It's not really free because if you use their paid search you will have to pay for it just as the other user says it will display Googles crap instead of Real Results that you can count on. With that being said Google my business is great for people who have a local business and just want their business displayed when people do a Google search it's easy to be found that way.

In my opinion it's a useful tool for local businesses. Not so much for digital businesses though.

How does it effect the SERP? I'm confused what it would do to play a role in this.

I don't think it do a lot to change the serp I think it just kind of maniplates the local searches only for whatever town you live. So if you're looking for serp rank then I'm sorry but youre still gonna have to get your hands dirty.
The good thing about Google my business though is once you get your listing on there it's very very hard to get it removed I've actually called Google and asked them to remove it and mine is still there even though I don't have my local business anymore. So I get calls at 2-3 in the morning from people asking to have the car towed Lol.
