White hat - building links with the aim of protecting brand name and gaining traffic - if done right, it gets people building links for you blah blah. Often a slow burner and slow progression but more static rankings.
blackhat - quick gains, build links anywhere and scale. Often gains far quicker keyword rankings but you're sometimes sleeping with one eye open, checking rankings everyday cause you're just waiting for a slap

When you do SEO wearing a black hat, it's called BlackHat SEO and if you do it while wearing the white hat, it's called WhiteHat SEO. There's also Grey Hat and Blue Hat but the Red hat is reserved for Linux and the Pink Hat is for Pimps.
You missed out the latest up and coming "router hat"

The internet is for everybody. It is not own by Google, yahoo or bing. Google is just a website like any other website. Every website has services to offer. Google offers search services to visitors that go there. The search sites/engines have their criteria built into what is called search algorithms. Because people want their sites to rank high in the search engine, they try to factor out what theses ranking criteria might be, so that they can manipulate things to get these high rankings. These manipulations are what is being refer to as Search Engine Optimization (SEO). If the manipulation is acceptable to the search engine, it is called WHITE HAT SEO, if not is BLACK HAT SEO.
