I created a personal stealth PP account (UK account).

Can I use it to sell in the dropshipping model using Woocommerce? Or would it be ideal to upgrade to a business account? The problem is that (I believe) they would ask for business documents in the UK, but I don't have...any suggestions?

Most likely they will ask for verification documents such as invoices, proof of deliveries, and will ask about your business model.
Regardless of having a personal account or a business account, they will ask these documents as soon as you'll be getting payments.

You can use Personal PayPal on Woocommerce without problems. It does not look as professional as using the full PayPal Checkout but it will work fine.
