I have never tried this before so I figured I'd see what you guys have to say. I usually start off with new domains for affiliate sites.

Today I found an old website that had been selling a product and it's related products online for 10+ years (non affiliate). It's metric were: CF:32 TF:33 and DA:17. I checked everything for spam and its backlinks are clean and niche related and the site still has links indexed in google.

A lot of the keywords for this niche are low competition with 800 to 1k searches.

What are my chances of getting nice rankings using this domain as an affiliate site? It seems to me like it should work well but is there anything from your experience that says otherwise?

If it's clean and either niche relevant or brandable, then go for it.

Make sure it's not been dropped or deindexed and you should be fine.

Yes fine.

Make sure no backlinks have any spam , links added with spam get you ban/penalised , if there any spam links use google webmaster tools to get rid of them

Stats look really good

Remember pbn can help in a heigh niche

You are sure to achieve top rankings with a site with metrics like that. If it is still indexed in Google then you have nothing to lose.

It doesn't even have to be niche relevant or brandable or anything. Take the strongest domain you have, post articles to it, blast it with some additional PBN links and you are good to go. I've been doing this method for quite some time with pretty good results.
