There are a lot of dating websites which they advertise that you pay €0 for membership then they auto subscribe you to 2-3 monthly payments for different services.

example:
https://ibb.co/L8ySV4K
https://ibb.co/THn0023

who is processing payments for these guys? Is it legal or they have a very high risk payment processor?

The auto subscribe seems illegal unless that company offered a opt-in or your free trial has ended.

Typically people forget to uncheck boxes.

Companies like ccbill for example does this type of processing. High risk merchants don't have any issues getting these accounts. Chargebacks is what kills a lot of those merchants overtime. A biller can only take so much damage.

Check the screenshots. They write Free membership so everyone can see, asking to insert card details to check age and in the bottom of the page they add the text that they will be subscribed to monthly services

It is quite common truthfully. Just a lot of companies don't hide the opt in. If they do then atleast use a cloaker with a landing page so your merchant that is processing your cards, isnt going to see what everyone else says. But if there isn't many chargebacks, they could careless. They are covered.
