I have an engagement ring, but I don't know where to sell it. I don't want to take it to a jeweler because I know they'll bend me over.

Are there any trust worthy websites, or is eBay my best option?

You can go to a few jewelers so you can get an idea of what the ballpark is. I would consider putting it on ebay if you have all the docs.

no way i'd sell this on ebay (it must be worth a few thousand $), you can be buttfucked from too many directions (buyer, ebay/paypal)

i'd definitely go the offline way with this

I'd suggest you stay away from eBay, no way you'll get what the diamond rings worth. Try selling it offline instead.

You can go to different jewelers to get an estimate of how much it's worth.

I have all of the docs and certs for it. I even had it appraised when I first got it last year. I was thinking about Craigslisting it. Meeting any potential buyers in a public place.

Bring it to a couple of pawn shops and you will get a good idea of the wholesale value, also if they buy diamonds on a regular basis they will tell you the quality of the diamond. Once you've done that I would bring it to several jewelers and see what they offer based on the numbers the pawn shops offered. Unless it's an exceptional stone you won't get near the retail price unless you can offer it directly to an end buyer.

FYI - Diamonds and most jewelry is marked up "Triple Keystone" (some are marked up higher or lower based on the quality and demand) which means that what ever the retail price it's wholesale value is one third.
