What to promote with White Hat SEO?

I am very noob in SEO, only doing apps. What to promote with white hat SEO except amazon affiliates?
I want to make a wordpress site, write some content in free time and rank it just for fan (it's not my main job, just for fun).

It should be strong affiliate, not some shady CPA. Some proposition?

May be a website with tutorials on apps and then enrolling visitors in different courses. A very successful guy did this with excel.

it's crazy niche but newbies are not even trying because huge competition and big brands.
With long tail can be good
