I've never made an affiliate site before, the only money I have ever made was from direct linking, and landing pages, but anyway, I'm going to setup an affiliate site on a few different sub-niches.

The traffic sources will be Pinterest, Tumblr Twitter, Facebook etc..

The way I thought it should be set up is, it'll be a mixture of informational posts and review/recommendation pages/posts.. So, therefore, the goal is to drive the visitor from the informational post towards the appropriate landing page/review, right?

If that is right, what should be optimized? And what are the best ways to drive the visitor from the informative article to the landing page?

    That's right.

    What should be optimized? Everything.

Unique content, page load speed, linking structure, keyword density and so on.

Just as bartosimpsonio said, as described you are actually building up a authority sort of website, it needs to have quality content to be optimized well and has advertising of products that would be actually your monetization method down the road. Just check out competition, see who is doing that good, do it better. It sounds simple, but that's the way it is.

When it comes to split testing, that is something completely different and I'm not sure if I understood point here of that and/or your question.

Split testing would be to have your review of weight loss product and for example 2 landing pages that you want to send visitor to, first visitor you will be sending to page A (review of product on merchant page) and second visitor you'll be sending to page B (straight to order page) and so on and you'll be split testing what converts better for you page A or page B where you are sending visitors. I hope this helps a bit.

I'm not doing SEO for this site, this site will only bring is traffic from social networks. By the way, should I be split testing the informational articles as well as the landing pages?

EDIT: And what about split testing site themes, that matters too right?
