The toughest is make money online and web hosting, great competition and it takes time to rank in these niches.

Car loan. I don't know the present situation. I am telling you my personal experience of 2011.
I started a simple blog about car loan. But it worked very good. so i tried to increase the SERP and PR. then i understand that how much competitive it was. at last i made the 1st page but not more than that. I stopped the blog. Just added 2 unit of adsense. Still gives 5/6$ per month ;)
Its the toughest niche i think.

Adult (although irrelevant if you are only using adsense), other than that Loans/Credit.

Porn is the toughest, not only SEO-wise, everything is complicated (cashing out, hosting, etc).

    The rest is country dependent:
the 2nd in US is probably insurance
the 2nd in UK is betting/horse racing

I would probably say insurance is the hardest.

Regards to betting/horse racing them keywords are really surprisingly not as hard as everyone thinks, I ranked a clients site for several betting/horse racing terms in about 4-5 months :).

Depends on the sub-niche, everything that leads to the bookmakers is pretty much impenetrable. Everything that surrounds the bookmakers is populated mostly with affiliating noobs who exchange links between themselves, so its pretty easy to rank.

I have to disagree. Everything in the adult industry is pretty straight forward. SEO, you're not going to rank for "Porn" or any broad niches, that's basically like trying to rank for "Movies". If you do decide to go the SEO route on adult (Which I don't recommend, simply not worth the time), you just have to be good at talking to other webmasters and do some link swapping. If you can somehow convince a few large site owners to put your link in their site somewhere, you'll be ranking fairly quickly. This also helps, as well as tumblr blogs. They allow adult content and are still worth a decent amount backlink-wise.
Cashing out, as long as you find either a reputable company or small but honest (Hard to do), they usually pay via. PayPal, Check, and Wiring. Hosting, you just find a host that accepts adult traffic. Not hard at all.

And remember, with adult SEO, most of your competitors have the same struggles ranking as you, so it's all pretty even.
