what is the feasibility of doing a coupon / discount site these days?

I see some really big sites in this space, but is there any good niches

that could still be successful for a newbie?

I think it could. People always search for discounts.

Webhosting, domaining free samples. Etc.. All are good niches.

Now if you find one they will all work similarly.

Offering up to date coupons is the hardest part as well, despite this niches are profitable up to their highest capacity which has a near climbing growth rate.

To answer the broad question.. A niche is as profitable as the target traffic you send to it
    there being no exact number.

With a few twists you can make this go viral and make lots of bank with it. I'd give you the cash explosion hint, but I think you need to learn from trial and error.

I will give it a go after I finish my current project. I am working through Meathead's amazon guide right now.
