What is best SEO strategies to rank ecommerce store long term?

Just looking for some advice about what are the best strategies to rank a ecommerce store long term on Google.

Driving traffic should be done regularly. Building backlinks as sticky posts will help for more time. Again, they depend on Google Algorithm until there are some changes.
 
category page text - on top of the page
u need a good designer tho so that u dont ruin the ux
 
I think the latest trend now for SEO would be local SEO - try registering a country level domain like .co.uk - seems like these type of domains are doing really well in terms of local SEO.
When a local IP is used to perform a local search, the country level domain is given a little bit more priority in the listing, and has been so for quite sometime now, thus, I think this could be a good strategy, if you can fit it in your campaigns.

How much text would you recommended for top page category? Seems difficult to implement without ruining UI, or do you recommend adding "view more" to text block to clip the space it takes up?

view more is risky
google knows what text is prominently displayed and what isnt
obviously dont post 500 words at the top
but you can get away wtih 50-75 words, but again, with a talented graphic designer so that the ux is still solid

Would you say the best method with be to have short descriptive text at the top, then below the products on category page have 500+ words?
