What do professional SEO specialists do at major companies?

I've been looking at vacancies in the UK for SEO specialists, and I was just wondering: what exactly do you think SEO specialists do at major companies?

I wouldn't imagine them sitting around and scraping for Web 2.0s! Do you think some blackhat methods are still at play when it comes to major companies/websites and publications? Would love your opinion on this; or even if you've worked for a big company and have some experience to share.
