Today Italy declared the use of Google Analytics illegal, but it is not the first European country to do so. How to deal with it?

why do they do this?

Because they sell / share data about non-US residents with the NSA and the EU is sick of it. It is prohibited for them to encourage corporations to snoop on US citizens on their behalf, but not non US Citizens.

Well that's the cover story the EU using anyway, I imagine the real motive probably involves trying to work toward flexing a greater degree of sovereignty in telecoms but especially computer tech for better personal profitabilities, ultimately. Otherwise they would probably have taken such a step years ago. But once they fail at this they will probably just sign some kind of deal with Microsoft anyway. All of this will be at the hard working European Digital Marketers expense...

But if you really want to work with a viable GA alternative at this time, check at Matamo. Highly recommend people across Europe and even beyond look into this - really good! If not better.

but it is not the first European country to do so. In your opinion how people should deal with this. Can you just do nothing in hopes that Google will fix the problem? Or is it better to uninstall it? Or if you have small sites it doesn't bother you much?
Simple.

if (user is from italy){
// dont display google analytics
}

Pretty easy to code :)

Matomo is free, if you download it and host it yourself. If you want to use the hosted solution, yes, is paid.

Fuck G Anal ytics.....I'm waiting for that ranking factors transparency law to be applied....that could be the end of G.

I ditched GA long time ago. I have noticed that GA usage somewhat has negative impacts on our BH sites.
