    What if I create backlinks pointing to example.com,
    but have example.net as anchor text

    So it goes like this:
    http://example.net

    Which website will get credit?

    the backlink is the banklink.

    I'd say the .com will start ranking for the .net keyword eventually. Just like if you search for "Click Here" in Google, it always will show Adobe Reader as #1 because of all the sites that use that in their anchor text. So that leads me to believe that you can get any site to rank for any keyword that you want.

    Actually a lot of people type in URLs into a google search bar. Check google keywords tool for any popular domain and it will say.
