It became so annoying, they made me add a new filter to my Gmail, which auto-deletes every incoming email containing "GDPR". lol

Yup. Half of them are companies begging for opt-in, the other half are people agressively spewing advice on how to 'adapt in a post-GDPR world'.

I feel like a better solution would have been to make a rule where you had to email out only if you DID NOT update your privacy policy. I would have received significantly fewer emails if that was the case.
