My question is that should you use different Google search consoles, and if for some reason one gets penalised, would others get affected, or would anything else happen to them?
It's not a must for sure, you can get one of the websites affected without any influence over the other(s),
It depends on what type of website(s) you're referring to, I would use a different browser & account with spam/test websites
