I was told to nofollow all outbound links on my website, even when linking to authority sites like Wikipedia so that I keep all juice inside my site.

It's this a good thing to do or not?

I run an Amazon affiliate site.

Yes it's a good thing especially when you are running an affiliate site.

its also a good idea to have all links go through a redirector.
so when someone posts a link to scrub all the link juice you have your site setup to do yoursite.tld/redirect.php?u=linkedsite.com
and add redirect.php to robots.txt so a search engine won't even go there. and viola no link juice

It may not do any harm but ideally you should only be using it for affiliate links or other kinds of paid links, or links you can't vouch for (e.g. in comments). Using no-follow doesn't keep any link juice on your site, Google closed that loophole some time ago.

It's a good idea to have at least one normal external link to an authoritative source e.g Wikipedia so Google sees it as natural linking to make your content of more use & quality.

I think if you have a big website and every link is no follow that might look a bit odd. Plus linking to related and trusted sources is a good on page SEO factor :)

hide the affiliate links. You will find many webmasters complaining about rank drops because of those links. However not all links should be nofollow. You can leave few ones with ******** tag.
