So I am doing local SEO for a client of mine and I was wondering what you think is the best way monthly payment, or payment per project. Pay up front or pay later with a signed contract?

I always take monthly payments. A "payment per project" model, in my opinion, isn't ideal since local SEO is never really "finished", even if you can obtain a spot in the 3 pack and #1 results, as you'll still need to do regular maintenance for them. In my case, I don't offer standalone SEO services to my clients (I run full online marketing campaigns), so once they start ranking well, I shift my focus more toward conversion rates and getting the most out of the visitors they already have.

As far as when to accept the payment, I have them sign the contract first and then pay before I do any work. You don't want to start doing any work and run into scope creep issues or late payments.
